Photo a Day 3. This Happened Today

When life gives you over ripe nanners.... you mash them up and bake bread!


Classic banana bread is a timeless treasure. It's a buttery, just sweet-enough treat that pairs well with a morning cup of coffee or after dinner with a scoop of ice cream. The secret to a good loaf of banana bread is over ripe bananas. They'll give you the most concentrated banana flavor. I had some sitting on my kitchen counter for a few days just begging me to mash them up for bread. So... this happened today.

Here's my recipe:

1/3 cup vegetable oil
1/2 cup sugar
2 eggs
1 3/4 cup flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. cinnamon
3 very ripe mashed bananas

Preheat oven to 350 degrees. In a small bowl, mash the bananas with a fork. Mix in the oil and sugar. Add eggs and mix well. In another bowl, combine the flour, baking powder, soda and cinnamon together. Add dry ingredients to the banana mixture. Mix until just blended and the flour disappears. Pour into a prepared loaf pan. Bake for 50 minutes, until a toothpick inserted in the center comes out clean. Set aside on a rack and let cool for 15 minutes. Slice 'er up and slather on the butter!
